Creamy and cheesy spinach green chile enchilada recipe.

4 Poblano chile peppers, about 1 pound; 4 pounds fresh spinach, stems removed and well rinsed; 4 tablespoons unsalted butter, plus 4 tablespoons; 1 cup.

Distribute remaining cheese and the chopped spinach between each tortilla. Spread 2/3 cup of your enchilada sauce in the bottom of your prepared baking pan. Roll up tortillas and place side by side seam-side-down in the pan. Spread remaining sauce over enchiladas.

In a skillet over medium heat, warm tortillas one at a time until flexible, about 15 seconds. Spoon about 1/4 cup of the spinach mixture onto the center of each tortilla.
